Medicated Food Workshop in Zhejiang Chinese Medical University

●Top-grade Cuisine for Replenishing Qi-Yunnan-style steamed chicken with herbs

Ingredients: free-range chicken(about 1Kg), salt (3g), white pepper (5g),Ginger(5 pieces), Huangqi (Astragalus membranaceus)(10g), Gouqi(Fructus Lycii) 5g.

Step1. Wash chicken thoroughly, cut into pieces, and add 3g salt and 5g white pepper as the marinade for half an hour. Place the chicken pieces evenly on the boiler and cover the chicken pieces with ginger.

Step2. Prepare a pressure cooker ready, put in clean water. Put the boiler right on the pressure cooker (air vent valve removed), and use a soaked towel (not too dry or too wet) in-between the boiler and a pressure cooker to prevent the leak of steam. Because this chicken soup is fully condensed by steam, the chicken original flavor is perfectly preserved in the boiler.

Step3. Boil the water with high heat and then turn to the gentle heat for 2.5 hours till the chicken is fully cooked.

Braised Old Duck with Long Gu (Fossil Fragments)

Ingredients: Old duck (about 1000g), Long Gu (Fossil Fragments) (400g), ham, dried bamboo shoots, cooking wine, ginger, spring onion

Step1.Cut the duck, Long Gu and ham into small pieces and rinse

Step2.Put the duck, Long Gu and ham mixture in the wok with cold water, and stay quick boiling for 3 minutes; rinse the mixture with warm water.

Step3.Put the mixture into a stewpot, and put in dried bamboo shoots, cooking wine, ginger (pounded). Add in hot water. Boil over high heat before turning to lower heat,and simmer for about 3 hours.

Step4. Add in salt and sugar about half an hour before serving, sprinkle with spring onion before serving.

Therapeutic Effect:Tranquilize the mind and nourish ‘yin’, alleviating headache and vertigo.

          

Braised Shelled Shrimp with veggies——Lose weight by eating right

Ingredients:prawn half a kilogram, some carrot, corn, celery, onion, cooking wine (stored for 3 years),egg white, Fu Ling powder (Poria Cocos)(3g), Shan Yao(Chinese Yam) powder(3g), corn flour, White Pepper Powder, salt, and oil.

Step 1. Prawns are washed and put into the freezer for half an hour. After taking those prawns out, remove the prawn heads and prawn shells. Make slits at the back to remove intestine. Rub with a spoon of salt and rinse well, drying them with kitchen towel.

Step 2.Add salt, cooking wine, egg white, Fu Ling and Shan Yao powder, corn flour, White Pepper Powder, and oil into the shelled prawns in order.(make a good mix after each add)

Step 3.Put those marinated shelled prawns into the refrigerator for over half an hour.

Step 4.After carrot and celery being sliced and chucked separately,make a quick boiling of carrot,celery and corn in a little salted water with a little oil till medium well for preparation.

Step 5.Sliding those shelled prawns with warm oil and fry till the color is changed.

Step 6.Saute onion in oil until fragrant,add prepared carrot, corn for a quick frying, and add salt,shelled prawns and lastly, the celery. Add a little cooking wine on the edge of the wok, serve after a stir fry.
